Ingredients
Scale
- 2 bananas
- 1 cup oats
- 2 eggs
- 2 tbsp yogurt, heaping tbsp
- 1 tsp baking powder
- 1 tsp vanilla or cinnamon (optional)
- 1 tsp butter or coconut oil
Instructions
- Peel the bananas and add them to a blender or mixing bowl.
- Add the oats, eggs, yogurt, baking powder, and optional vanilla or cinnamon.
- Blend until mostly smooth, or mash the bananas and mix everything by hand until combined.
- Let the batter rest briefly while heating a nonstick skillet over medium to medium-low heat.
- Add the butter or coconut oil to the skillet and spread it lightly across the surface.
- Pour small portions of batter into the skillet, leaving space between pancakes.
- Cook for about 2–3 minutes, until the edges look set and the bottoms are lightly golden.
- Carefully flip and cook for another 1–2 minutes, until the pancakes are golden and cooked through.
- Repeat with the remaining batter, adding a little more butter or coconut oil if needed.
- Serve warm with your favorite toppings.
Notes
- Use ripe bananas for the best natural sweetness and texture.
- Make smaller pancakes so they are easier to flip.
- Cook over moderate heat to prevent the outside from browning before the centers are cooked.
