Description

This creamy homemade Baba Ganoush is a delicious Middle Eastern roasted eggplant dip made with tahini, fresh lemon juice, garlic, and extra-virgin olive oil. Smooth, savory, and full of roasted flavor, it’s perfect served with warm pita bread and fresh vegetables.

Ingredients

Scale
  • 2 medium eggplants (pierced with a knife or fork)
  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil (plus more for serving)
  • 2 garlic cloves
  • ½ teaspoon sea salt
  • Finely chopped fresh parsley
  • Smoked paprika
  • Red pepper flakes (optional)
  • Pita bread (for serving)
  • Veggies (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the eggplants. Pierce them several times with a knife or fork.
  3. Place the eggplants on a baking sheet and roast until the skins are wrinkled and the flesh is completely tender. The exact cooking time will depend on their size.
  4. Remove the eggplants from the oven and let them cool until safe to handle.
  5. Cut the eggplants lengthwise and scoop out the soft flesh, discarding the skins. Drain excess liquid if necessary.
  6. Transfer the eggplant flesh to a mixing bowl. Add the tahini, fresh lemon juice, olive oil, garlic cloves, and sea salt.
  7. Mash and mix until combined, or use a food processor for a smoother consistency.
  8. Transfer the Baba Ganoush to a serving bowl and create gentle swirls on the surface.
  9. Drizzle with additional olive oil and garnish with chopped parsley and smoked paprika. Add red pepper flakes if desired.
  10. Serve with pita bread and fresh vegetables.

Notes

  • Drain excess moisture from the roasted eggplant to prevent watery dip.
  • Mash by hand for a rustic texture or use a food processor for a smoother consistency.
  • Prepare ahead and refrigerate in an airtight container. Garnish just before serving.
