Description

This Easy Ground Turkey Sweet Potato Bake combines lean ground turkey, tender sweet potatoes, bell peppers, spinach, and melted mozzarella cheese with warm spices. It’s a hearty, flavorful family dinner made with simple ingredients.

Ingredients

Scale
  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 2 large sweet potatoes, peeled and cut into uniform ½-inch cubes
  • 2 medium bell peppers, diced
  • 1 medium onion, diced
  • 2 cups fresh baby spinach, packed
  • 1½ cups shredded mozzarella cheese
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ¼ cup chicken broth
  • Salt and black pepper, to taste

Instructions

  1. Peel the sweet potatoes and cut them into uniform ½-inch cubes. Dice the bell peppers and onion, and prepare the remaining ingredients.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground turkey, breaking it into smaller pieces as it cooks. Brown until cooked through, then season with salt and black pepper.
  3. Add the diced onion and bell peppers to the skillet and cook until they begin to soften.
  4. Stir in the chili powder, cumin, garlic powder, and paprika.
  5. Add the sweet potato cubes and chicken broth. Stir to combine and continue preparing until the sweet potatoes begin to soften.
  6. Return the cooked ground turkey to the skillet. Add the baby spinach and stir until the spinach begins to wilt.
  7. Transfer the mixture to a baking dish and spread it evenly.
  8. Sprinkle the shredded mozzarella cheese over the top.
  9. Bake using the original recipe’s specified oven temperature and baking time until the sweet potatoes are fork-tender and the cheese is melted. Ensure the turkey reaches an internal temperature of 165°F (74°C).
  10. Allow the casserole to rest briefly before serving.

Notes

  • Cut the sweet potatoes into evenly sized ½-inch cubes for consistent cooking.
  • Frozen spinach can be substituted for fresh spinach if thawed and thoroughly drained.
  • Refrigerate leftovers in airtight containers for 3–4 days.
