Ingredients
Scale
- 2 large boneless skinless chicken breasts
- 10 oz mushrooms (button or baby bella)
- 2 tablespoons salted butter
- 3–4 tablespoons olive oil
- ½ cup all-purpose flour
- Salt and freshly ground pepper
- 2½ cups beef broth
- 1 chicken bouillon cube or 1 tsp better than bouillon
- 1 teaspoon soy sauce
- 1 teaspoon onion powder
- ½ teaspoon mustard powder
- ½ teaspoon dried thyme
- ½ cup apple cider vinegar (non-alcoholic substitute)
- 3 cloves garlic, minced
Instructions
- Pat the chicken breasts dry with paper towels. Combine the flour with salt and freshly ground pepper in a shallow dish.
- Coat both chicken breasts evenly in the seasoned flour, shaking off excess.
- Heat the olive oil and salted butter in a large skillet over medium heat.
- Add the chicken breasts and cook until golden brown on both sides. Transfer to a plate.
- Add the sliced mushrooms to the same skillet and cook until softened and lightly browned.
- Add the minced garlic and stir until fragrant.
- Pour in the beef broth, scraping the browned bits from the bottom of the skillet.
- Add the chicken bouillon, soy sauce, onion powder, mustard powder, dried thyme, and apple cider vinegar. Stir until combined.
- Return the browned chicken breasts to the skillet, nestling them into the mushroom sauce.
- Continue cooking until the chicken is completely cooked through and reaches an internal temperature of 165°F (74°C) in the thickest part.
- Spoon the mushrooms and sauce over the chicken and serve warm.
Notes
- Button mushrooms provide a mild flavor, while baby bella mushrooms offer a deeper, earthier taste.
- Avoid overcrowding the skillet when browning the chicken to encourage an even golden crust.
- Use a meat thermometer to ensure the chicken reaches 165°F (74°C). Taste the sauce before adding extra salt because the broth, bouillon, and soy sauce already contribute saltiness.
