This 30 Minutes Loaded Potato Taco Bowl is an easy, satisfying dinner featuring crispy seasoned russet potatoes, savory taco meat, melted cheese, fresh lettuce, juicy tomatoes, creamy avocado, and sour cream. Perfect for a flavorful weeknight meal!

Ingredients

Scale

Seasoned Potatoes

  • 2 pounds russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Taco Meat

  • 1 pound ground beef or turkey
  • 2 tablespoons taco seasoning
  • 1/2 cup tomato sauce
  • 1/4 cup water

Toppings

  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 sliced avocado
  • 1/2 cup sour cream
  • Fresh cilantro and green onions for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice the russet potatoes into evenly sized cubes. Toss with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet. Bake for approximately 20–25 minutes, or until tender inside and golden around the edges.
  4. Meanwhile, cook the ground beef or turkey in a large skillet over medium heat, breaking it into smaller pieces until browned and fully cooked.
  5. Add the taco seasoning, tomato sauce, and water. Stir well and simmer until the meat is evenly coated and the sauce has thickened.
  6. Prepare the toppings by shredding the lettuce, dicing the tomatoes, slicing the avocado, and chopping the cilantro and green onions.
  7. Divide the baked potatoes among serving bowls. Add the taco meat and shredded cheese.
  8. Top with lettuce, tomatoes, avocado, and sour cream.
  9. Garnish with fresh cilantro and green onions. Serve immediately.

Notes

  • Cut the potatoes into similar-sized cubes so they bake evenly.
  • Ground beef and ground turkey both work well in this recipe.
  • Keep fresh toppings separate until serving to maintain their texture.
