Description

These Roasted Chocolate Cherry Brownies combine rich Dutch-process cocoa, semi-sweet chocolate chips, and sweet roasted cherries in a deliciously fudgy chocolate dessert. Perfect for chocolate lovers who enjoy a fruity twist on classic brownies.

Ingredients

Scale
  • 2 cups cherries, cut in half (washed, pitted)
  • Sprinkle of sugar
  • 1 1/3 cup white granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 TBSP unsalted butter (melted)
  • 1/3 cup oil (canola or vegetable)
  • 1 tsp pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 TBSP cornstarch
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven according to the recipe’s roasting and baking instructions.
  2. Spread the washed, pitted, halved cherries on a baking sheet. Sprinkle with sugar and roast until softened and their flavor is concentrated. Allow them to cool and drain excess liquid if needed.
  3. Prepare a brownie baking pan by lining it with parchment paper if desired.
  4. In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolk until combined.
  5. Add the melted butter, oil, and vanilla extract. Mix until smooth.
  6. Add the flour, Dutch-process cocoa powder, cornstarch, and salt. Stir gently until the dry ingredients are incorporated, taking care not to overmix.
  7. Fold in the semi-sweet chocolate chips.
  8. Gently fold in the cooled roasted cherries, distributing them throughout the batter.
  9. Spread the batter evenly into the prepared pan.
  10. Bake according to the recipe’s baking temperature and timing, until the edges are set and the center is slightly soft. A toothpick inserted into the center should come out with moist crumbs.
  11. Allow the brownies to cool completely in the pan before slicing into squares.
  12. Serve and enjoy.

Notes

  • Allow roasted cherries to cool and drain excess juice before folding them into the batter.
  • Avoid overmixing after adding the flour to help maintain a fudgy texture.
  • Let the brownies cool completely before slicing for cleaner squares.
